Gougères – Bake from Scratch

Pâte À Choux

  • 8 large eggs
  • 2 egg yolks
  • 1 ¼ cups water
  • 1 ¼ cups milk
  • 1 ½ cups butter
  • 1 ½ teaspoons mild brown sugar
  • 1 teaspoon salt (3 grams)
  • 2 ½ cups (312 grams) all-purpose flour
  • 1 cup grated Singing Brook Cheese* (or Parmesan) (100 grams)
  • Sea salt
  1. Preheat oven to 375°. Line baking sheets with parchment paper.
  2. In a medium saucepan, ship 1 ¼ cups water and subsequent 4 elements to a simmer over medium heat, add flour, stirring with a picket spoon, until mixture pulls away from the pan, about 2 to a few minutes.
